In the pastry kitchen, Anthony Chenoz will craft a dessert centred around fig and red wine – a tribute to vine leaves whose colours shift each week with the rhythm of the season. His Grand Cru chocolate mignardise, inspired by the shape of a grape, will provide the perfect finishing touch to a meal that celebrates the harvest in all its forms. At the two-Michelin-starred restaurant La Grand’Vigne, these creations will form part of a seasonal menu designed by Nicolas Masse, offering a delicate and inspired interpretation of this special time of year.
An Ecosystem in Full Bloom

As the first eco-certified Palace hotel, the property is committed to preserving the biodiversity of its estate. The recent installation of three new beehives near the vegetable garden will soon allow bees to forage freely amongst the vines, enriching the land’s natural balance.
