Originally from Burgundy, Chef Julien Martin draws his inspiration from the terroir in which he was born.

Trained to the highest standards, notably alongside the two-Michelin-starred Chef Nicolas Masse at Les Sources de Caudalie, he developed a sensitive and exacting approach to ingredients, guided by precision of flavor and deep respect for the seasons.

At Le Clos de la Tour, his authentic yet refined cuisine pays heartfelt tribute to Burgundy, with each creation finding its natural extension in the restaurant’s splendid wine cellar. Enhanced by a remarkable wine list combining prestigious grands crus with more confidential vintages, his dishes come together to create a complete experience at the crossroads of the site’s millennia-old history and a delicate modernity, leaving an unforgettable impression on the palate.

An intimate setting

In this minimalist setting with monastic undertones, Le Clos de la Tour offers an atmosphere suspended in time.

The lighting is carefully orchestrated to shape a chiaroscuro ambiance, where shadow and light enhance every detail, from the texture of the wood to the brilliance of the dishes.

As night falls, the historic tower rises at the foot of the restaurant that bears its identity, lighting up to complete this almost mystical aura.
